How do I know this person is online on Facebook?
There’s this guy I’ve been talking to and recently he’s avoided me. I find that as soon as I sign out of Facebook, he updates his status. Someone told me he could be making himself invisible or using a special application. Is there any way I can catch him in the act of doing this? Is there something I can use to find my invisible friends on Facebook?

No. The only thing you can do is call them out on their bluff. When you see a new status update from them but it shows they are not online, send them a message immediately and ask what is up.
Honestly though, if he wants to avoid you, he will have no problem doing so.
No, other than watching for any activity from him
Whenever he updates his status so just check out your online friends, if he is there means he is online.
